Whole Food Plant Based (WFPB) Tuscany

Once upon a time, I dreamed of a bike tour in Tuscany and never took the plunge. Last Fall, I saw a WFPB tour in Tuscany set for the Spring and took the leap.

Italy has some of the most delicious fresh plant based cuisine and this tour was amazing! One week in Tuscany changed my life in a good way.

Italy in spring is amazing! Teaming with fresh tomatoes, basil, and the bounties of gardens, it is a WFPB paradise. While many dishes traditionally are made with ingredients that include non-plant based components, it is possible to make them WFPB.

Our week in a countryside Tuscan villa was complete with a pool and sports field. Our days were filled with trips to surrounding towns, hot springs & spa, and even had a pasta and pizza making lessons at the villa. There was plenty of time to relax and the schedule was just right with a balance of activities and relaxation.

At the villa, the large kitchen was complete with a private chef preparing WFPB meals, a table to seat 16 and gorgeous outdoor dining where we gazed across the rolling hills, vineyards and charming towns that dotted the landscape.

In the evening, we heard a Cuckoo bird calling….
